Took a corn beef brisket out of freezer to thaw. Used Thirdeyes pastrami rub. Put the rub on after the soak in water- changed it several times- the night before At 7:30AM put it on my Egg at 240*- using B&B Lump with chunks of Apple and Pecan wood. After almost 5hrs I put it in a pan on raised foil logs , poured in a can of beer for a steam finish and covered with foil. incr...

Wasn't in the mood for fancy, so warmed up the leave overs and pan fried some red taters and warmed up the Ribeye with some quarted red taters!

Anyone have the new Fireboard Pellet Drive controller? Think I might finally get around to upgrading the FEC. Tired of trying to set everything from memory since the display has been dead for a while. Won't be plug & play since there are a few safety features that need to be wired in. In addition it looks like I'll just need a new draft fan and a new internal temp probe.
